Ostmann potash is used as a raising agent with a characteristic taste, especially for loosening doughs that have a high sugar content and are processed as flat baked goods (e.g. honey cake dough). These types of dough are often left to rest for a few hours or days (cool and covered), as the potash causes the typical loosening of the dough during this time.
Application: As a rule, 10 g (one heaped tablespoon) is sufficient for 500 g flour. Always dissolve in a little lukewarm water before use.
